Over the past few weeks, living in my van and camping my way through Montana, I’ve become something of an expert on whipping up simple, healthy meals that require minimal time and clean up, and draw from a limited rotation of ingredients. With the exception of a few meals at my fav, Basal in Missoula, I haven’t eaten out once. Even when I had the opportunity to—at a concert last weekend or a free night in Bozeman—I actually preferred cooking for myself, saving a bit of money but also because I knew I could made anything just as, or more, satisfying as I’d find out.


In this time, there have been certain formulas I’ve come to rely on: a rotation of bases that are endlessly customizable. Most of these require one pan, one burner, and virtually zero prep, and draw primarily from whole ingredients or minimally processed foods.
