’ wonderful new cookbook, What to Cook When You Don’t Feel Like Cooking. (I think we can all relate?) The first time I made it, I was on a girls’ trip in New England and we—true to the title—absolutely did not feel like cooking. I ran to the store to pick up the ingredients, then pulled this salad together in about five minutes. Paired perfectly with an easy, casual cheese board on a hot summer day.
