Recipe: Slow-Cooked Coconut Beef Curry with Tons of Kale and Ginger
Good for the body and soul.
I rarely eat red meat*, but once every few months I find myself craving it, and this hit the spot. The photo of this is awful, but I think it speaks volumes that I kept forgetting to get a beautiful shot of it plated—until I’d finished my bowl. I adapted this curry from this recipe by Nicole Maguire of Simple Home Edit, who I discovered with a quick Google, adding more aromatics, vegetables, and broth to turn her recipe into the coconut curry of my dreams. So healthy, hearty, and delicious, I imagined it’d help you kick any cold. Enjoy!
*You could easily omit the red meat, or add in shrimp or salmon later in the cooking process!
